Wa in Konnichi Wa and Konban Wa

Why is it that the "wa" for these two words (maybe more?) are written with the "ha" sign (は) instead of the "wa" sign (わ) I learned?

Because they are

Because they are particles.

こんにち is literally "This day" and は is being used as a particle (the topic marker). When は is used as a particle, it is pronounced "wa". So the literal meaning is like: "(As for) this day".

Same thing with こんばんは(Konbanwa). こんばん means "This evening". は is acting as a particle (the topic marker). こんばんは〓 "(As for) this evening".
